BBQ Chickpea Salad: A Vegan and Healthy Recipe

I don’t know about you, but I am always on the hunt for a good, hearty salad. I am tired of eating wimpy salads that are made of 99% iceberg lettuce (which, let’s be honest. It’s just water). I want a satisfying salad that not only tastes amazing, but also fills me up for a while. Iceberg salads just make me hungry in like 5 minutes.

If you feel the same way, no need to look any further. You found it. The perfect, delicious, and filling sald recipe: the vegan BBQ chickpea salad. This is a salad for everyone, no matter your diet preference. Meat lovers to vegans. You all will love it.

And who doesn’t like chickpeas? And BBQ flavored chickpeas…even better!

Like any salad, toppings and add-ins can be varied. Feel free to add more of your favorite toppings or omit ones you are not a fan of. (Like, personally, not a big fan of tomatoes. So, I don’t add them to any salad, ever). But you do you.

Quick and easy hearty salad that will make you want to lick the bowl clean.

Ingredients:
 1 Avocado
 1 Carrot
 2 Cans of Chickpeas
 1 cup Cilantro
 2 cups Corn
 1 tsp Dried dill
 ½ tsp Garlic powder
 1 Bunch green onion
 1 Lettuce (or greens of choice)
 ½ tsp Onion Powder
 1 Red onion
 Pepper and salt (to taste)
 1 Vegan BBQ Sauce (of your choice)

In a non-stick pan, heat and mix chickpeas with your favorite BBQ sauce. Simmer for 15-20 minutes. Stirring occasionally.

While the chickpeas are cooking, chop up all the vegetables and then add to a big bowl.

Add dill, garlic powder, onion powder, pepper, and salt (to taste) to the big bowl. Mix.

Add the BBQ chickpeas to the big bowl and mix. Drizzle with your favorite dressing.
