Chickpea Carrot Salad Sandwich: Healthy Lunch Option

Trying to eat healthier? But tired of eating the same old boring salad every day? Well, here is a great alternative salad option for you: the chickpea carrot salad sandwich.

It has lots of flavor and actually keeps you full for longer than a wimpy salad does. Not too mention, it is a healthy option. This is a quick and easy recipe and will be ready in no time.

Don’t want a sandwich? Well, just omit the bread and eat the salad on its own. It is delicious either way.

So what are you waiting for the salad is not going to make itself.

A hearty, flavorful salad sandwich that will help you reach those being healthy goals. Delicious and filling.

Ingredients
 ½ cup Canned Chickpeas (feel free to use non-canned chickpeas, but cook before using)
 ½ Shredded medium-sized Carrot
 ½ Diced small, red bell pepper
 34 Chopped Cherry Tomatoes (Optional)
 1 tbsp Vegan Mayo (or mayo of choice)
 Salt & Pepper (to taste)

Directions:

Rinse and drain the chickpeas from the can. Then, using a fork, mash the chickpeas in a small bowl.

Add in the rest of the vegetables to the bowl.

Add mayo, salt, and pepper. Mix well.

Toast 2 slices of bread.

Note: When toasting the bread, make sure it is a little crunchy and not soft so it can hold the chickpea salad mixture.

Spread some of the chickpea salad mixture onto one slice and then add the second slice to make the sandwich.

Enjoy!!
