Cauliflower Sweet Potato Salad (Curry Roasted): A Healthy Recipe

The two things many associated with an Indian household is curry and turmeric. And in today’s day and age, turmeric is becoming very popular to the point people are taking turmeric shots.

Indians use a lot of spices daily. One of which is turmeric. So here is an Indian twist on a salad recipe. Get ready for a flavor packed and very healthy salad options.

A healthy and delicious salad with an Indian twist.

Yields1 Serving

 1 Head of Cauliflower
 1 Large Sweet Potato
 1 tbsp Oil
 1 tsp Curry Powder
 ½ tsp Garlic Powder
 ½ tsp Turmeric Powder
 ¼ tsp Red Cayenne Pepper Powder
 Salt & Pepper (to taste)
 1 Bunch of green onion
 1 cup Frozen Peas

Directions:

Cut the cauliflower into medium-sized florets and cut the sweet potato into 1/2 inch cubes.

In a large bowl, add

a. Chopped Cauliflower
b. Diced Sweet Potato
c. Drizzle with Oil
d. Curry powder
e. Turmeric powder
f. Garlic powder
g. Red Cayenne Pepper powder
h. salt & pepper

Mix it all together.

Lightly spray a baking sheet and evenly spread the cauliflower/sweet potato mixture.

Roast/bake for 30 minutes at 350F (flipping it halfway through).

Note: Make sure that the sweet potatoes are a little tender, but still have a little bit of a crunch to it before removing from oven.

Transfer the roasted cauliflower/sweet potato mixture. Add in chopped green onion and thawed peas.

Add your favorite dressing and serve.
