Eggless Whole Wheat Cinnamon Apple Cake: A Healthier Recipe

Soft, delicious, and a healthier version of the apple cinnamon cake. This recipe is made without eggs and uses whole wheat flour as opposed to white flour. A simple recipe for a yummy, less guilty dessert. Get ready for the warm and mouthwatering aroma of apples and cinnamon to fill your house and your nose.

In today’s day and age, everyone is one some kind of diet, whether it be vegan or vegetarian or even keto or less sugar. Whatever your diet plan, here is a simple and healthier version of a dessert we all can enjoy without any guilt.

I have used whole wheat flour for this cake since that is what is commonly found in an Indian household, but feel free to substitute it with your choice of alternative flour. Whole wheat flour just gives desserts that melt in your mouth kind of feel.

When using whole wheat flour and baking an eggless cake, you may find your cake is more flat or more dense than a “regular” cake. In order to reduce the flatness of the cake, make sure to sieve the dry ingredients several times to add that aeration.

Dry Ingredients:
 1 Apple (peeled & grated)
 1 cup Whole Wheat Flour (or flour of choice)
 1 tsp Baking Soda
 1 tsp Baking Powder
 1 tsp Cinnamon Powder
 ¾ cup Brown Sugar (or sweetener of choice)
 1 pinch Salt
Wet Ingredients
 ¾ cup Oil
 ½ cup Water
 ½ cup Milk

Directions:
1

In a non-stick pan (on low heat), add:

a. Peeled and grated apple
b. Sugar

Cook the sugar and apple together until the sugar melts. Turn off the heat when the mixture becomes a thick sauce-like consistency (kind of like applesauce).

In a small bowl, sieve together:

a. Flour
b. Baking soda
c. Baking powder
d. Cinnamon powder

Note: Since Whole Wheat Flour is used for this recipe, it is important to sieve the dry ingredients at least 3-4 times as this will aerate the flour. Otherwise, your cake will turn out flat and not rise as much.

In a large bowl, add:

a. Oil
b. The applesauce mixture you prepared in step 2.

Whisk the oil and applesauce mixture until it is completely homogeneous.

Add half the flour mixture (from small bowl) and half of the milk into the large bowl (with the applesauce mixture). Mix all together.

Repeat step 6 until all the flour mixture and milk has been added.Stir until completely mixed.

Note: Make sure the batter is not too thick or too runny.

Tip: If the batter is too thick, add more milk, and if the batter is runny, add more flour.

(Optional) Add in chopped nuts, fresh apple, or raisins if you would like.

Tip: Personally, I would recommend adding chopped apple into the batter as it adds more flavor to the cake.

Grease a round cake pan and pour in the batter.

Bake the cake at 375F for 30-35 minutes.

a. Once the cake is done baking, let it cool for a little bit.
b. Once the cake has cooled, loosen the edges of the cake pan and take out the
cake.
c. Allow the cake to cool for another 20 minutes before serving.
